What is A2 cow milk paneer (and why we make ours in-house)
A2 cow milk paneer comes from desi Gir-breed cows, contains the easier-to-digest A2 beta-casein, and tastes noticeably different from packaged paneer. Here is the full story — what A2 actually is, what it is not, and why we make it ourselves.

If you have shopped for paneer in Ahmedabad in the last two years you have almost certainly seen the phrase "A2 paneer" stamped on a packet. Most of the time the brand making the claim does not explain what A2 means, why it should matter to you, or whether the claim has been independently verified. We use A2 cow milk paneer in every Roasted Paneer Bowl we deliver — and we make ours in-house every morning rather than buying it packaged. This is the full explanation of why.
What does A2 actually mean?
Cow's milk contains a family of proteins called caseins, of which beta-casein is the most prominent. Beta-casein comes in two main genetic variants: A1 and A2. The A1 variant is the version found in most modern hybrid Holstein-Friesian and Jersey-cross dairy cows that supply the bulk of commercial Indian milk. The A2 variant is the original variant found in indigenous desi cattle breeds like the Gir, Sahiwal, Tharparkar and Red Sindhi.
When A1 milk is digested, the body breaks the A1 beta-casein down into a peptide called BCM-7. There is a body of clinical research suggesting BCM-7 may contribute to digestive discomfort in some people — bloating, slow digestion, occasional gut inflammation. A2 milk does not produce BCM-7 in the same way, which is why people who otherwise feel uncomfortable after dairy often report tolerating A2 milk better.
It is worth being honest about the limits of the research: A2 milk is not a medical-grade lactose-free product, and it does not cure lactose intolerance (which is a separate enzyme issue, not a beta-casein issue). What A2 reliably gives you is milk and paneer that is closer to the protein profile that traditional Indian breeds have produced for centuries — and a noticeably different taste.
Why we use A2 cow paneer specifically
Three reasons. First, taste. A2 paneer prepared fresh has a softer, slightly sweeter character than commodity buffalo or A1 cow paneer. It holds spice well — which matters for our Roasted Paneer Bowl, where the paneer carries the masala without losing texture under the Avocado Basil Sauce.
Second, protein quality. Paneer is already a complete protein — meaning it supplies all nine essential amino acids — and A2 paneer made fresh tends to retain more of the original whey solids than packaged paneer, which is often pressed harder for shelf-life. Each Roasted Paneer Bowl carries 34–37 grams of protein per serving, drawn almost entirely from the in-house A2 paneer.
Third, sourcing transparency. We make our paneer in our Gota kitchen each morning from milk supplied by a trusted local Gir-breed dairy. We can trace each day's batch back to the specific dairy and the specific morning's milk. That kind of transparency is impossible with the packaged paneer that most cloud kitchens use.
How we make our paneer (the boring honest version)
We collect fresh A2 cow milk in the early morning. The milk is brought to a controlled simmer, food-grade citric acid is added to curdle the milk, the curds are separated and pressed lightly into blocks, and the finished paneer is rested for 30–45 minutes before it goes into the day's bowls. The whole process takes around two hours from milk to plated bowl. Nothing is frozen, nothing is held over from the previous day, nothing is bought in plastic.
We do not add stabilisers, preservatives, food colour or any kind of binding agent. The paneer is just milk + citric acid + heat + pressure. That is the only way to get the soft, fresh-curd character we want — anything stored for more than a day starts to firm up and lose that quality.
